Coconut Chocolate Chip Cookies
These chocolate chip cookies are one of my favourite things to bake. I spent the weekend painting the guest room so during one of my breaks, while I was waiting for paint to dry, I decided to bake a batch.
I’ve had this cookie recipe for years and I have no idea where I got it. I added the shredded coconut to the original recipe that I had written down just because I love it.
Ingredients:
3/4 cup white sugar
3/4 cup brown sugar
1 cup soft margarine or butter
1 egg
2 cups all purpose flour
1 teaspoon baking soda
1 /2 teaspoon salt
1/2 cup chopped walnuts
1/2 cup shredded coconut
3/4 cup semi-sweet chocolate chips
Pre-heat the oven to 375 degrees. Cream the sugars with the margarine, and then add the egg (beat the egg lightly before adding). I don’t have a food processor that mixes dough so I do everything by hand.
Mix the dry ingredients (flour, baking soda, and salt), and then add to the creamed mixture. Stir until mixed (the dough will be stiff). Mix the nuts, coconut, and chocolate chips together and then add them to the dough.
I l-o-v-e this raw cookie dough, and I could probably eat the whole bowl, but I somehow always manage to contain myself and actually bake some cookies.
I like large cookies so I use about 1/4 cup of dough per cookie. This is a stiff dough, so you do have to work with it to make it into balls. I flatten each ball once on the cookie sheet. This recipe makes about 18 large cookies. I got 19 out of this batch.
I always line my cookie sheets with parchment paper when baking. I find that everything just bakes better that way.
For large cookies allow them to bake for about 12-15 minutes. If you like soft cookies bake just until the edges are set. If you like your cookies a little crunchy let the edges brown a little.
For small cookies spoon rounded teaspoonfuls onto the parchment paper and cook for about 8-10 minutes until light brown (the centres will be soft). I have made small cookies, but I prefer the larger ones.
Let the cookies cool for a few minutes on the cookie sheet before moving them to a cooling rack. The cookies will be soft, so moving them too soon may cause them to fall apart.
And enjoy! One of these babies with a cold glass of milk is my idea of chocolate chip cookie heaven.
